Oh, man. Those are my calves, there on the left. Not literally, but…calves twins? So inspired by this, I wasn’t sure I would ever have hope for that part of my body :)
Excuse me, I have to go make this for lunch immediately.
Update 4/2: This is wonderful, really. I had it twice this weekend and will probably make it again sometime this week. If you’re not a huge fan of arugula, you might mix half arugula and half other greens—I’m a fan of the spring mix at my local store.

I am, sadly, not up to running (or even long periods of walking, outside of the pool) on my knee yet, but my sis & her friends are doing this in Denver in May and I’m tagging along with my camera. It looks like a blast, can’t wait!
